Key Health Benefits

High-Quality Protein (31.3 g): Combining whole eggs with 0% fat Greek yogurt yields a complete amino acid profile. This high protein density accelerates muscle repair, supports satiety, and prevents mid-morning energy crashes.

Sustained Energy & Fiber (4 g): The combination of banana and raisins supplies both fast-acting and slow-release carbohydrates alongside dietary fiber to stabilize digestion and maintain steady blood sugar level.

Micronutrient Dense

Potassium: Bananas and Greek yogurt deliver essential potassium to regulate fluid balance, blood pressure, and muscle contractions.

Choline & Vitamin B12: Egg yolks are one of the best sources of choline (crucial for brain function and cell structure), while Greek yogurt provides a significant boost of Vitamin B12 for nerve health.

Calcium: Greek yogurt delivers an abundant supply of calcium for bone density and healthy teeth.

Heart-Healthy Fats & Antioxidants: Eggs provide healthy monounsaturated and polyunsaturated fats that assist in the absorption of fat-soluble vitamins (A, D, E, and K). Cinnamon contributes powerful antioxidant properties and has been shown to assist with blood sugar control.

Metabolic Balance

By pairing non-fat Greek yogurt with just a single teaspoon of maple syrup, this recipe maintains low energy density while optimizing overall fullness. With a balanced macronutrient ratio of 31g protein to 46g carbohydrates, it serves as an optimal post-workout fuel or an exceptionally stabilizing start to your day.

Ingredients

  • 1 ripe banana
  • 2 large eggs
  • ½ tsp of vanilla extract
  • ¼ tsp of ground cinnamon plus extra for garnish
  • ½ tsp of butter
  • 1 tbsp of raisins or chocolate chips
  • ¾ cup of Greek yogurt 0% fat
  • 1 tsp of maple syrup for drizzling

Instructions

  • In a bowl, mash the banana thoroughly with a fork. Mix in the cinnamon and vanilla extract until combined. Add the eggs and whisk well until smooth.
  • Heat a non-stick frying pan over medium-low heat. Melt the butter, spreading it evenly across the pan.
  • Pour the egg mixture into the pan and sprinkle the raisins (or chocolate chips) evenly on top.
  • Cover the pan with a lid and cook for about 4 minutes, or until the edges are set.
  • Slide the omelet onto the lid, flip it back into the pan to cook the other side, and cook for another 3 minutes until fully set.
  • Transfer the omelet to a plate. Top with Greek yogurt, a drizzle of maple syrup, and a sprinkle of cinnamon.
  • Tip: Keep the heat on medium-low so the natural sugars in the banana don't burn before the eggs fully cook through!
