Spicy Chai Muffin

When using spices the more the merrier. This moist whole grain muffin will bring a dance of flavors to your mouth. Together with a cup of your preferred beverage it is a wonderful breakfast or a well deserved afternoon break.

I just love the chai flavor, it all started with the Starbucks Chai Latte, that was the first time I tasted chai and fell in love with the spices mix.

But actually it should be Masala Chai which means Spiced Tea, Masala mix of spices and Chai means tea. Chai latte is just milk tea. Maybe I should have named Masala Muffin considering there is no black tea just the combination of  spices; cinnamon, cloves, ginger and cardamon.

Each of them with their own health benefit; cinnamon good blood circulation, cloves anti-bacterial, ginger anti-inflammatory and cardamon lower blood pressure.

Ingredients

½ cup of oat flour

1 cup of whole wheat flour

½ tsp of baking soda

¼ tsp baking powder

¾ tsp of ground cinnamon

½ tsp of ground cardamom

½ tsp of fresh ginger grated (or ground ginger)

⅛ tsp of ground cloves

⅓ cup of melted and cooled coconut oil

1 egg

½ tsp of vanilla

⅓ cup of brown sugar

1 cup of applesauce

 

Prep

Preheat the oven 400ºF (205ºC). Line a 12-tin muffin tray with 10 liners (the recipe makes 10 muffins). In a medium bowl whisk together the oat flour, whole wheat flour, baking soda, baking powder. In another bowl whisk until well combined the coconut oil, egg, vanilla, brown sugar, all the spices and applesauce. Combine the wet with dry ingredients. Evenly divide the batter amongst the prepared muffin tray. Bake for 20 minutes or until a toothpick inserted comes out clean. Enjoy!
