Ingredients (Makes 7 Servings)

4 eggs

1/2 cup of cottage cheese

1/4 cup of grated parmesan cheese

1/4 tsp of garlic powder

1/8 tsp of ground nutmeg

1/8 tsp of ground black pepper

1/3 cup of grated mozzarella cheese

1/3 cup of grated cheddar cheese

1 3/4 cup of cauliflower in small florets steamed

Prep

Preheat your oven to 180°C (350°F). Lightly grease seven cups of a muffin pan (silicone molds work best for easy removal).

Using a blender or a hand mixer, blend the eggs, cottage cheese, parmesan cheese, garlic powder, nutmeg, and black pepper until completely smooth and homogeneous.

Stir the grated mozzarella and cheddar cheeses into the egg mixture.

Distribute the steamed cauliflower florets evenly among the 7 prepared muffin cups. Pour the egg and cheese mixture over the cauliflower, making sure the grated cheese is divided equally among all the cups.

Bake for 20 to 25 minutes, or until the tops are golden brown and the bites are beautifully puffed.

Let them cool in the pan for 10 minutes before gently removing them from the molds. Serve warm and enjoy!
