Fluffy Pumpkin Chai Pancakes
These extremely fluffy pancakes are the ultimate treat on a chilly autumn morning when all you want is a cozy, warming breakfast.

The bold chai spices pair beautifully with the rich pumpkin, creating a deeply comforting flavour that is perfectly elevated by a drizzle of maple syrup. While they taste like pure indulgence, they are naturally packed with fiber, protein, essential minerals, and antioxidants to charge your morning.

Health Benefits
Keeps You Full & Energized All Morning
Unlike regular white-flour pancakes that leave you hungry an hour later, these are packed with 100% whole wheat flour and real pumpkin puree. Together, they provide plenty of natural fiber to slow down digestion, giving you steady, long-lasting energy without a sudden mid-morning sugar crash.
Packed with Immune & Skin-Boosting Goodness
That rich, golden-orange color isn’t just pretty—it comes from high levels of beta-carotene found in real pumpkin. Your body converts this into Vitamin A, a powerful antioxidant that supports a strong immune system, healthy vision, and naturally glowing skin.

Spices That Do More Than Taste Good
The warm blend of cinnamon, ginger, cardamom, and a pinch of black pepper gives these pancakes a cozy, chai-inspired flavor while working wonders behind the scenes:
Cinnamon: Helps keep your blood sugar balanced after eating.
Ginger: Soothes digestion and supports overall gut comfort.
Black Pepper: A tiny pinch helps your body absorb all the healthy nutrients from the pumpkin much better.

Low in Sugar, High in Flavor
With only one tablespoon of brown sugar in the entire batch (less than half a gram per pancake!), sweetness comes naturally from sweet spices and pumpkin. You get all the cozy comfort of a fall treat while keeping things wholesome and light.

Ingredients
- 1 cup whole wheat flour
- 1 tbsp brown sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp ginger
- 1/8 tsp nutmeg
- 1/8 tsp cloves
- 1/8 tsp black pepper
- 1 tsp apple cider vinegar
- 1 cup milk
- 3/4 cup pumpkin puree
- 1 large egg
- 1 tbsp vegetable oil
- 1 tsp pure vanilla extract
- Butter for greasing
Instructions
- In a medium bowl, whisk together the whole wheat flour, baking powder, cinnamon, cardamom, ginger, nutmeg, cloves, and black pepper until evenly combined.
- In a separate large bowl, whisk the milk and egg until frothy. Add the brown sugar, vegetable oil, pumpkin puree, apple cider vinegar, and vanilla extract. Whisk thoroughly until smooth.
- Pour the dry ingredients into the wet mixture. Gently fold with a spatula or whisk until just combined (do not over-mix; a few small lumps are fine). Let the batter rest for 5 minutes.
- Heat a cast-iron skillet over medium-low heat and melt 1/4 tsp of butter to coat. Keep an eye on the temperature, as these pancakes brown very quickly—ensure the heat isn't too high so they cook all the way through without burning.
- Spoon 2 generous tablespoons of batter per pancake onto the skillet. Cook for 2 to 3 minutes until small bubbles form on the surface and the edges look set. Flip and cook for another 2 to 3 minutes until golden brown.
- Repeat with the remaining batter, adding butter as needed. Serve warm with maple syrup.
