Apple Pancakes

- 1 cup of milk of your choice
- 1 egg
- ½ tsp of cinnamon
- 1 tbsp of vegetable oil
- 2 gala apples or 2 small apples of a different variety grated
- 3 tbsp of raisins optional
- 1 cup of whole wheat flour
- 2 tsp of baking powder
- Butter for greasing
Whisk together the milk and the egg until froth.
Add the cinnamon and the oil and whisk some more. Incorporate the apples and the raisins, whisking well. Add the flour and the baking powder and whisk until just combined.
Grease a hot iron cast skillet with ¼ tsp of butter, add 2 generous tbsp of batter, using the back of a spoon help flatten and shape the pancakes.
Cook until small bubbles form on the surface (about 2 to 3 minutes), then flip and cook for another 1 to 2 minutes until golden brown. Serve with maple syrup and enjoy!
