Apple Pancakes

These pancakes are super fluffy, a treat for breakfast or a mid-afternoon snack. The apples give flavor and great texture, besides extra fiber and a glowing skin. Whole wheat flour for more nutrients. Think healthy apple pie on the go.

Ingredients

1 cup of milk of your choice

1 egg

½ tsp of cinnamon

1 tbsp of vegetable oil

2 gala apples (or 2 small apples of a different variety) grated

3 tbsp of raisins (optional)

1 cup of whole wheat flour

2 tsp of baking powder

Butter for greasing

 

Prep

Whisk together the milk and the egg until froth. Add the cinnamon and the oil and whisk some more. Incorporate the apples and the raisins, whisking well. Add the flour and the baking powder and whisk until just combined.

Grease a hot iron cast skillet with ¼ tsp of butter, add 2 generous tbsp of batter, using the back of a spoon help flatten and shape the pancakes. Cook the pancakes until small bubbles start forming on the surface, about 2 minutes. Flip the pancake and cook the other side for another minute or until the pancake is golden brown. Serve with maple syrup and enjoy!
