Lentil Curry

Lentils are an excellent source of folate and a great source of plant-based protein and fiber. They also provide iron, manganese, copper and zinc. Lentils are also rich in polyphenols which are known for their anti-inflammatory, antioxidant and neuroprotective effects.

Ingredients

¼ medium onion chopped

1 garlic clove minced

1 stalk of celery chopped

2 mini bell peppers (1 red, 1 yellow) chopped

2 tsp of vegetable oil

½ cup of green lentils rinsed

2 cups of water

1 tbsp of curry paste

Salt to taste

 

Prep

In a medium saucepan, heat the oil, add the onions and garlic and cook for 2 minutes. Add the celery and bell peppers and cook for another minute. Add the lentils and the water stirring well. Bring to a boil, lower the heat, cover and let it simmer for 20 minutes. Add the curry paste and stir to dissolve it. Simmer for another 10 minutes. Adjust salt if needed. Serve with rice, quinoa or couscous. Enjoy!
