Breaded Brussels Sprouts With Yogurt Sauce

Brussels sprouts are small but mighty. One cup offers over 100% of your daily value of vitamins K and C. Also rich in minerals and antioxidants that may reduce inflammation, decrease cancer growth. Why not try this super fast recipe?

Ingredients

1lb (453g) of brussels sprouts

1 tbsp of mayonnaise

1 tbsp of olive oil

1 ½ tsp of balsamic vinegar

1 tsp of maple syrup

¼ tsp of onion powder

Salt & black pepper to taste

1 cup of panko bread crumbs

Yogurt dipping sauce

2 tbsp of plain yogurt

1 tbsp of mayonnaise

¼ tsp of oregano

¼ tsp of paprika

 

Prep

Preheat the oven to 350ºF (180ºC). Line a baking sheet with parchment paper.

Wash and cut the brussels sprouts in half. Season with all ingredients, except the bread crumbs and mix well. Using small batches of the bread crumbs, coat the seasoned brussels sprouts and place them in one layer in the prepared baking sheet. Bake for 20 minutes or until they are golden brown. 

While the brussels sprouts are baking, prepare the dipping sauce by mixing all the ingredients. Enjoy!
