Strawberry Salsa

The strawberries give a unique aroma, besides a sweet note that is emphasized by the balsamic vinegar. Add the sun loving tomatoes and you have an elegant salsa. A simple and delicious way to celebrate summer flavors, together with vitamins, nutrients and minerals.

In North America strawberries are in season from mid may to early october, so now is the time to enjoy this juicy-sweet bright-red berry. Green-house tomatoes are available all year round, but now it is the time to find the best quality tomatoes on farmer’s markets.

Any tomato will work, but for this salsa I recommend using cherry tomatoes, since their seeds are so small and they are very juicy and sweet. If you use other tomato varieties, consider removing the seeds.

I know it is time consuming but the smaller and evener you chop your veggies the more delicious and beautiful your salsa will be. If you are short of time just do your best and never mind, but if you can take your time it will make a difference. You can also use this moment to meditate and relax as you chop. I almost forgot to say but, a sharp knife makes all the difference here.

When you think about a fruit full of water, watermelon might come to mind, but strawberries are 91% water and 8% carbohydrates making it a low carb and low calorie fruit. They are also an excellent source of vitamin C. It also offers good amounts of potassium, folate and manganese. Anthocyanins are the compound responsible for their intense red color but they are also an antioxidant, antimicrobial, anti-cancer and anti-inflammatory.

If your tortilla chips are finished you can always use the salsa as a scrumptious salad dressing.

Ingredients

1 cup of chopped tomatoes

½ cup of chopped strawberries

¼ cup of chopped red bell pepper

¼ cup of chopped celery

2 tbsp of chopped parsley

1 tbsp of olive oil

½ tsp of balsamic vinegar

Salt and black pepper to taste

 

 

Prep

Mix all ingredients and serve immediately. Enjoy!

Store in the fridge in an airtight container for up to 1 day. Drain excess liquid before serving.
