Made with only four ingredients, this refreshing and super creamy cold treat, makes your summer even more sweeter. The caramel-like sweetness of dates paired with the nutty taste of the toasted coconut together with its crunch, is pure delight. 

These popsicles are so easy to make, yet the final result is scrumptious. It is always good to have them ready in the freezer. They can either be a guilt-free dessert or a cooling break in the middle of a long and hot afternoon.

You can use store bought toasted coconut or toast your own, it only takes about 7 minutes and a crunchy bite will be guaranteed. I usually have unsweetened dried coconut flakes in the freezer, and when needed I just toast the required amount golden brown. Like this I have both types of coconut readily available.

Dates are rich in potent antioxidants, fiber and can give a significant contribution to the recommended daily intake (RDI) of iron. Ingredients

¾ cup of chopped dates

1 cup of coconut milk

½ cup of vanilla oat milk or milk of your choice

¾ cup of unsweetened dried coconut flakes

Prep

If using a store bought toasted coconut skip this step.

Place the coconut flakes in a medium skillet, over medium/low heat. Always stirring, toast the coconut until golden brown. It should take about 7 minutes. 

Add the dates, coconut milk and oat milk to a blender. Blend until the dates are dissolved. If your blender is not very powerful and the dates are hard. Soak the dates in the oat milk for at least 1 hour before blending.

Fold the toasted coconut flakes. Pour the liquid in the popsicle molds and freeze for at least 4 hours or until set. Enjoy!

It makes 5 popsicles of 2.7oz/80ml each.
