Happy Radish Salad

Three ingredients salad that is crisp and elegant. The combination of radish, green apples and celery creates a dish that is a bit spicy, a bit sweet and crunchy. Serve as an appetizer, side dish or as a picnic salad.

Sometimes simplicity gives the best results, this salad is the proof. Vegetables and fruit finely sliced seasoned with sesame seeds dressing and you have it. Ready in a flash, will make any meal special. 

 

 

On one of my trips to the grocery store, I saw beautiful and very fresh radishes on sale. Although they were not on my list, the beauty and the price convinced me to develop a salad for Foodellette. Radishes may not be a beloved root vegetable, but they are very healthy and should be eaten more often.

Radishes are a good source of vitamin C. Vitamin C stimulates collagen production which is vital for healthy skin and strong and flexible blood vessels. They also have anticancer properties. Radishes are powerful antifungal and can fight off fungus like Candida albicans, responsible for yeast infection. They can also boost liver function, helping detoxify the liver and heal against damage.

Everything is good in moderation, eating substantial amounts of radishes may interfere with thyroid hormone production. Also since radishes increase bile production, talk to your doctor about consuming it if you have gallstones.

Ingredients

Salad

2 stalks of celery

5 radishes

1 green apple

Dressing

1 tbsp olive oil

½ tsp rice vinegar

1 tsp sesame seeds

½ tsp soy sauce

Salt & black pepper to taste

 

Prep

Start by preparing the dressing. In a small bowl add all the ingredients and mix vigorously until well combined.

Using a mandolin and the guard. Carefully cut the vegetables and the apple in thin slices. 

In a medium bowl add all the sliced vegetables and apple, and the dressing. Stir gently to not break the slices. Serve and enjoy!

The salad stays fresh for 3 days in an airtight container in the fridge.
