A silky and smooth avocado chocolate mousse complements so well the more intense and very creamy matcha chia pudding. Lots of healthy fats, antioxidants, plus fiber in this superb combination of flavors. Can be a decadent dessert or a deluxe afternoon pick me up.

Matcha Chia Pudding
½ cup of plant-based milk
1 tsp of maple syrup
2 tbsp of chia seeds
½ tsp of matcha
Avocado Chocolate Mousse
¾ cup of avocado (about 1 medium avocado)
2 tbsp of maple syrup
½ tbsp of cocoa powder
½ tsp of vanilla
Prepare the chia pudding the night before. In a glass container with a lid dissolve the matcha with 2 tbsp of the plant-based milk. Add the remaining milk, maple syrup and chia seeds. Mix well and refrigerate overnight.
Prepare the avocado mousse. Using a hand mixer, blend all the ingredients until well combined and smooth.
In your serving container intercalate layers of matcha chia pudding with the avocado chocolate mousse. Enjoy!
