Chocolate & Peanut Butter Blended Chia Pudding

Velvety and satisfying, there is a good balance between the chocolate and peanut. This is a dessert for breakfast type of recipe. Sweetened with dates, for extra fiber and a low glycemic index, ensuring no blood sugar spikes.

With the protein and good fats from the peanut butter and chia seeds you will be energized and satiated.

This chia pudding is blended for an extra creamy and smooth texture. You can use either an immersion blender or a regular blender. After blending the chia seeds are almost completely ground, thickening the pudding and guaranteeing the special texture. Besides, the nutrients and protein are easier for your body to absorb when the seeds are ground.

As I mentioned before you can eat the whole serving for breakfast and be well nourished the whole morning or you can make two small portions and serve as dessert to end a meal on a sweet note having a guilt-free treat.

Chia seeds are an excellent source of antioxidants that will fight free radicals preventing oxidative stress and cell damage. These antioxidants will also reduce inflammation helping prevent heart disease and cancer. They are rich in vitamins and minerals such as magnesium, phosphorus and calcium promoting strong and healthy bones. Being high in fiber, studies have shown it may help reduce insulin resistance and therefore improve blood sugar levels.

Peanuts offer good amounts of essential nutrients like proteins, healthy fats such as monounsaturated and polyunsaturated which are good for a healthy heart, besides vitamins, minerals and antioxidants. They are one of the richest dietary sources of biotin, which is important for thicker hair, stronger nails and healthier skin. Also an excellent source of magnesium, folate, vitamin E and copper. Peanuts may also lower cholesterol and prevent the formation of small blood clots reducing the risk of cardiovascular disease and stroke.

Ingredients

1 tbsp of peanut butter

1 ½ tsp of cacao powder

2 tbsp of chopped dates (about 3 medium dates)

2 tbsp of chia seeds

¾ cup o milk of your choice

1 tbsp of mini chocolate chips

1 tbsp of dry roasted peanuts chopped

Prep

Mix the chocolate chips and the roasted peanuts and reserve.

Using an immersion blender or a standard blender, blend the peanut butter, cacao powder, dates, chia seeds and milk until thicker and creamy, about 3 minutes.

Place the chia pudding in the serving container and sprinkle the chocolate chips and roasted peanut mixture. Refrigerate for 2 hours or overnight before serving. Enjoy!

Keep it covered in the fridge for up to 3 days.
