Watermelon Chia Parfait

Healthy breakfast where different textures and tastes will dance in your mouth. Juicy and sweet watermelon, together with the creamy chia pudding, sour yogurt, even sweeter honey, crunchy pecans and popping hemp seeds. Assured a good mood for all morning.

Have you tried watermelon and yogurt? It is a delicious combination of sweet and juicy together with sour.The watermelon sweetens the yogurt and the yogurt balances the watermelon sweetness with sour. Watermelon juice with a fresh squeezed lemon is also amazing, their tastes compliment each other. 

A sweet and ripe watermelon has a uniform size (don’t choose the elongated ones; they are usually watery), it should also have an orange field spot and dark and dull skin.

Besides being delicious and refreshing, watermelon is 92% water therefore will help you stay hydrated. It is a good source of potassium, magnesium, vitamins A and C. Lycopene is responsible for the red to pink color in watermelon. It is also a natural powerful antioxidant, watermelon has more lycopene than tomatoes. Studies have shown that lycopene might have anticancer properties. Watermelon may also lower your blood pressure, may protect your joints accordingly, reduce your risk for rheumatoid arthritis and relieve muscle soreness after exercise. The list goes on…

Ingredients

1 cup of small cubed watermelon

 ¾ cup of milk of your choice

2 tbsp of chia seeds

1 ½ tsp of maple syrup

½ tsp of vanilla

2 tbsp of plain yogurt of your choice

1 tsp of honey

2 tsp of chopped pecans

2 tsp of hemp seeds

 

Prep

On the night before add to a jar or small bowl the milk, chia seeds, maple syrup and vanilla. Stir well, wait 5 minutes, stir again, cover and refrigerate. You will have more chia pudding than required for one Parfait. You can make more than one Parfait or keep it covered and refrigerated, and eat with different toppings for breakfast or snack.

On the following morning take a 10oz (300ml) glass. Add 3 tbsp of chia pudding, half cup of the cubed watermelon, 2 tbsp of plain yogurt, topped with the honey, pecans and hemp seeds. Followed by the remaining watermelon. Enjoy!
