Key Nutritional Highlights

Naturally Sweetened with Whole Foods

This pudding contains 0g of added refined sugar, getting all of its rich sweetness naturally from whole dates. Unlike processed sweeteners, dates deliver sugar bundled with whole-food fiber, vitamins, and minerals. This natural fiber slows down the absorption of carbohydrates into your bloodstream, providing steady, sustained energy without the sharp spikes and crashes often associated with traditional desserts.

Complex Carbohydrates and Plant Protein

Built on a foundation of whole grain quinoa and fiber-rich dates, each serving provides 3.8g of dietary fiber alongside 4.1g of complete plant protein. Quinoa is a rare plant food that contains all nine essential amino acids, making it a high-quality protein source. Together with the fiber, this combination aids digestion, supports gut health, and keeps you feeling fully satisfied for hours.

Rich Texture and Healthy Coconut Fats

Using full-fat coconut milk brings the fat content to 15.6g per serving, giving this pudding its luxurious, custard-like texture without any dairy. While coconut milk is higher in saturated fat, over 60% of the fatty acids in coconut oil are Medium-Chain Triglycerides (MCTs), primarily lauric acid.

MCTs are processed differently by your body compared to long-chain saturated fats found in animal products:

  • Rapid Energy Metabolism: MCTs travel directly from your digestive tract to your liver, where they are quickly converted into usable energy or ketones rather than being easily stored as body fat.
  • Antimicrobial Properties: Lauric acid converts into monolaurin in the body, a compound known for its antibacterial, antiviral, and antifungal properties that help support immune function.
  • HDL Cholesterol Support: Studies show that coconut fat can help raise levels of HDL (“good”) cholesterol, supporting overall cardiovascular profile when consumed as part of a balanced, whole-food diet.

Course: Dessert, Snack
Servings: 6
Author: Marina Beretta Araujo

Equipment

  • immersion blender

Ingredients

  • 3/4 cup of quinoa
  • 1 ½ cups (400 ml) of coconut milk
  • 2 cups (500 ml) of unsweetened almond milk
  • 1 cup (145 g) of chopped dates
  • 1/8 tsp of salt
  • 2 tsp of vanilla

Instructions

  • In a medium bowl, combine the coconut milk and chopped dates. Using an immersion blender, blend until the dates are completely smooth and incorporated into the coconut milk.
  • Add the quinoa to a medium pot over medium heat to toast. Stir constantly for about 10 minutes, until the quinoa starts popping, turns golden, and becomes fragrant.
  • Carefully pour the coconut-date mixture, almond milk, salt, and vanilla extract into the pot with the toasted quinoa (take care, as it may splatter). Place over medium heat and bring the mixture to a boil, stirring frequently.
  • Reduce the heat to a gentle simmer. Cook for about 35 minutes, stirring often, until the pudding thickens and the quinoa becomes soft and translucent.
  • Divide the warm pudding evenly among 6 single-serve jars, or transfer it to an airtight container. Serve warm or chilled. Store covered in the refrigerator for up to 4 days.
